My husband actually came up with this recipe, and it's one of our FAVORITE, inexpensive dishes! I love cooking in iron pots & iron skillets. If you've never tried cooking in iron, something about it improves the taste. I thought I was imagining this, but I actually tried the same recipe in other types of cookware... pyrex, stainless, etc.
Here's what you will need:
CAST IRON POT
1 head of green cabbage
2 packages of Eckrich Farms Kielbasa
2 green bell pepper (can use red, yellow... or combination)
1 vidalia onion, (white or red will suffice)
2 tbls. canola or olive oil
Cajun Spice (Weber N'Orleans Cajun Spice... or Camp Dog Cajun Seasoning **see below for where to find)
Cut cabbage into chunks, slice pepper and onion. Cut kielbasa into 1" sections. Put oil in bottom of pot to prevent sticking. Layer; kielbasa, cabbage, seasoning, pepper, onion, cabbage, kielbasa, seasoning, pepper, onion... until you've used all your ingredients. I don't measure my cajun spice... because I LIKE a LOT! Some of you may not like that much. I put my cast iron pot top on, and cook on 425 degrees until the cabbage is tender. Be careful when removing the pot top, the steam is HOT and can possibly burn you! Cook at your own risk... he he. We're all adults, right!?
As if you though you couldn't improve on this tastey, quick meal... try cooking it over an open fire!
